This is being an annus horribilis for mushroom lovers, for the «boletaires».    Let’s hope that the season, although late, gives us good fruits and we can come back from our excursions with good and varied «cistells de bolets» to be able to prepare and share the long awaited recipes of «bolets».
But as I always see the positive side of things, the absence of other types of mushrooms has led me to discover a «bolet» that I already knew and had tried before, but always mixed with others and never alone: the «molleric».    It is not very appreciated and, in spite of being very abundant, it is not usually found in the market and there is even talk of poor culinary quality.
The way to prepare these mushrooms is very simple, although a little laborious.    But I assure you that a little work is worth it to discover a «bolet» gastronomically unknown but surprising taste and texture.

The Sureny, Cigró or Cep d’Alzina is a very appreciated mushroom because it belongs to the cep family, although it is not one of the best known. It is often confused with the Mollerics (or as we say at home, Pinatells). The main differences between them are that the skin of the stalk is difficult to remove in the case of ceps – it does not come out of a piece as in Mollerics -, and on the other hand that the stalk is much thicker and robust. Oh, and that culinarily they have nothing to do… the Surenys are very good edible.

Ou de Reig – el románticamente llamado «huevo real» o «testículos de rey» es la estrella del otoño con su regio gorro castaño y sus bonitas branquias amarillas. Si se asa lentamente entero, es el compañero perfecto del hígado de pato ligeramente asado y espolvoreado con sal marina.
La llenega prolifera en el Bages de septiembre a diciembre. Su capuchón es del color de las aceitunas arbequinas y puede llegar a medir hasta 10 cm de ancho con branquias blancas y lechosas. Se encuentra debajo de los pinos en las zonas de baja montaña.
Los ceps (porcini) son fácilmente reconocibles por su carne oscura y sus cuerpos rollizos. Su sabor es suave, pero si se afeitan como si fueran trufas y se rocían con un aceite de oliva afrutado, se obtiene el carpaccio más delicado.
Los rovellones (capuchón blanco sangrante) surgen a principios de septiembre y duran hasta diciembre. Se encuentran entre las setas más populares de Cataluña, de un bonito color atardecer salpicado de verde. Se preparan a la plancha con un poco de aceite de oliva, ajo y perejil y mucha sal.
Los camagrocs o rossinyols (rebozuelos carnosos de color melocotón) crecen entre agosto y octubre. Prosperan en los bosques de pinos, sobre todo en las zonas musgosas al pie de los árboles. Crecen en racimos, tienen forma de trompeta y las agallas se vuelven del revés en tonos amarillos y anaranjados.
