La «buena» noticia es que hace tres semanas los agáricos lechosos con tapa de azafrán (así se llama en inglés el Lactarius deliciosus, Pedro), en El Corte Inglés, costaban… ¡exactamente 60 euros/kilo! Al menos, ¡no han subido de precio! ¡Las variedades de hongos tardíos de las zonas más secas de España, como el níscalo, han sido diezmadas este año debido a la abrumadora sequía de septiembre-octubre.Eso sí, los rebozuelos del norte húmedo han sido mucho más baratos y excelentes!
Hace unos días, compramos níscalos en el Mercado de la Cebada por 25 euros el kilo… y siempre he pensado que nuestro mercado parece un poco más caro que la mayoría de los otros que hay. Tenían un aspecto un poco musgoso por fuera, pero estaban absolutamente deliciosos, con un bonito color naranja y sin arenilla.
Parecían un poco musgosas por fuera ← No hay que preocuparse, Butterfly. Muchos miembros de la familia de los Lactarius (que significa: lechosos), particularmente pero no sólo los deliciosos, tienen esta propiedad de que la más mínima erosión de su (en este caso) brillante pero quebradiza superficie naranja (ni siquiera un corte – un simple moretón) se convierte inmediatamente en un amenazante verde oscuro. ¡Es sólo una reacción química sin el más mínimo peligro para el consumidor ni el más mínimo cambio en el sabor o las propiedades.Y 25 dólares era un precio estupendo! (El Corte Inglés siempre es escandalosamente caro de todos modos.) Dicho esto, en el húmedo otoño de 2002 pagábamos 4 euros el kilo…
